Tattoo To Remember A Baby

Charlottes salmon and avocado

Ingredients

  • - 1 slice of smoked salmon
  • - 2 blinis
  • - 1 avocado
  • - 3 tablespoons light cream
  • - 1 lemon
  • - 1 pinch of salt
  • - 1 bunch cilantro
  • - Sesame

    Utensils

    Paper Film - Verrines - Blanking (or glass)

    Directed

    - To make the avocado cream: to crush the lawyer then add cream fraiche, lemon zest and lemon juice, salt and coriander leaves. Mix well.
    - to line the glass as follows: after depositing the film in the glass, place slices of toasted blinis first round. Place a slice of salmon on the bottom of the jar, then fill the glass layer alternating layer of salmon and avocado cream.
    - Use a cookie cutter (or alternatively, a glass) to cut the base of the charlotte in the second blini.
    - Fold the film on the charlotte by packing lightly.
    - Let stand 3 hours in the fridge.
    - Once the charlotte ready, remove from pan and add some sesame seeds over
